La vid y el vino no solo son un cultivo o un alimento de gran valor económico a nivel mundial, sino que además están estrechamente relacionados con la cultura, las tradiciones y la vida cotidiana. Sin embargo, la enorme importancia que la uva y el vino tienen para nosotros es casi equivalente al desconocimiento que existe sobre su relación con la actividad científica. Este libro, de carácter multidisciplinar, enciclopédico, divulgativo y bilingüe, es el resultado del esfuerzo realizado por los científicos para dar a conocer, de forma didáctica y sencilla, los resultados de las múltiples investigaciones que, en torno a la vid y el vino, se han venido realizando en los distintos centros hoy pertenecientes al Consejo Superior de investigaciones Científicas, tanto en ciencias como en humanidades. Pretenden ser también estas páginas un lugar de encuentro entre los científicos, las empresas vitivinícolas y todos aquellos sectores que, de una manera u otra, están relacionados con la vitivinicultura. Por ello, no solo se muestran los trabajos realizados y sus resultados, sino que además se indica el centro del CSIC en el que se ha llevado a cabo, el grupo de investigación que los ha desarrollado y el contacto del investigador responsable, pensando en aquellas entidades o personas interesadas en ampliar información sobre alguno de los temas concretos incluidos en la obra. [eng.] Vines and wines not only provide us with a crop or food product of great economic importance worldwide, but also bear close links with our culture, traditions and daily lives. However, their great significance for us is almost matched by our ignorance about the scientific activity associated with them. The following book, with a multidisciplinary, encyclopedic, informative and bilingual style, compiles the worth of the scientists to raise awareness, in a didactic way and easy to understand, all the scientific knowledge (including social sciences) on grapevines and wine developed by all institutions or centers today belonging to the Consejo Superior de Investigaciones Científicas (CSIC). These pages will also serve as a reference point for researchers, wine-growing companies and other sectors that in fact share common interests with viticulture and winemaking. In this way, not only the results of the scientific studies are shown, but also the research group that carried out the work and the name and contact details of the lead researcher in order to offer those companies or individuals the possibility to ask for further information about any theme included in this book.
